GEM Pear & Orzo Autumn Salad

This quick and easy recipe has the best combination of crisp, fall flavors and can be served either as a side dish or a main course with the addition of any protein (we recommend grilled chicken). The crunchy Gem pears, tangy balsamic dressing, and peppery arugula work together to create a unique combination that will leave you wanting another scoop.


For Orzo

1 ½ cups orzo

3 cups chicken stock

For Dressing

½ lemon, juiced

¼ cup balsamic vinegar

⅓ cup olive oil

1 Tbsp honey

1 small clove garlic

salt and pepper

For Salad

1 GEM pear, thinly sliced

⅓ cup gorgonzola cheese, crumbled

⅓ cup dried cranberries

¼ cup walnuts, chopped

1 bunch parsley

1 ½ cups arugula

medium saucepan

medium serving bowl

small mixing bowl

Step 1 – Cook Orzo

  • Add chicken stock to medium saucepan on high heat.

  • Once boiling, add orzo and reduce to simmer.

  • Cook 8-10 minutes, or until stock has been absorbed.

  • Set aside to cool.

Step 2 – Prep Ingredients

  • While orzo is cooking, wash and dry all produce.

  • Crumble gorgonzola, chop walnuts, chop parsley, grate garlic, and thinly slice pear.

Step 3 – Make Dressing

  • In small mixing bowl, add olive oil, balsamic vinegar, honey, lemon juice, and garlic. Add salt and pepper, to taste.

  • Whisk until combined.

  • Add dressing to pot of orzo and mix.

Step 4 – Serve

  • In serving bowl, add dressed orzo, arugula, dried cranberries, and gorgonzola. Toss to combine.

  • Garnish with thinly sliced pears and parsley.

  • Enjoy!
